A new pastry is taking New York – and the internet – by storm. It’s called the Suprême, and this cream-filled croissant has quickly gained cult status thanks to its rich flavor, eye-catching design, and social media buzz.
The Suprême made its debut at Lafayette Grand Café & Bakery in New York City and has been compared to the legendary cronut – the croissant-donut hybrid that made waves back in 2013. However, many food lovers now argue the Suprême is the next big thing in the world of pastries, with some even calling it “worth the hype.”
This circular croissant is filled with velvety pastry cream and topped with glazes or other decadent additions, depending on the flavor of the day. The bakery’s creative spin on the classic French croissant has captivated foodies and content creators alike, resulting in millions of views on platforms like TikTok and Instagram.
Videos showing people biting into or pulling apart the pastry have gone viral, and customers have started arriving outside the bakery hours before it opens, eager to grab one before they sell out. Due to overwhelming demand, Lafayette limits each customer to two Suprêmes per visit.
Speaking to the Today Show, Lafayette’s executive pastry chef Scott Cioe said he never expected such a dramatic response. “We never imagined we’d have lines forming hours before we opened. It’s been wild,” he said.
Cioe, along with boulanger James Belisle, leads the team responsible for creating the Suprême. According to Cioe, the process to make each pastry is far from simple. It begins with traditional croissant dough, which is carefully shaped into a round form. Once baked and fully cooled, each croissant is piped with a rich pastry cream filling based on the chosen flavor.
In a statement shared with USA TODAY, the bakery emphasized the level of craftsmanship behind each pastry. “It’s a three-day process,” the statement read. “It’s definitely not easy. Every Suprême is made completely from scratch using only the finest ingredients.”
Though it took a few weeks for word to spread, the Suprême’s popularity exploded after a TikTok video spotlighted the pastry. Since then, demand has been nonstop.
For now, Lafayette Grand Café & Bakery remains the only place to try the Suprême. But with the level of buzz it’s generating, it wouldn’t be surprising if other bakeries begin trying to replicate the viral sensation soon.
Whether it will reach the iconic status of the cronut remains to be seen, but one thing is clear: the Suprême has already secured a sweet spot in the hearts – and feeds – of pastry lovers around the world.
